China delicatessen: dried goose

I am not sure how this is prepared: smoked dried goose?

I noticed in China many food are smoked, dried, kept in alcohol, vinegar, kept in salt, in spicies.
Of course these different techniques to keep food differ from one province to the next. It of course dates back from thousant years old: Chinese people learnt it from their ancestors.
Food was always scarce in China. So you had to find ways to keep the food for winter! 
This is also why Chinese people eat everything. Vegetable that we throw away, chicken feet, fish head and tail...
